MARY BERRY'S 'FAVOURITE' LEMON DRIZZLE TRAYBAKE RECIPE IS MOIST AND CRUNCHY

Touted as one of Mary Berry's "favourite" recipes, the lemon drizzle traybake is ready in less than an hour.

"It is always moist and crunchy," said Mary Berry, who shared her simple, yet fantastic, recipe.

Only requiring typical baking ingredients, including the classic trio of butter, sugar and flour, the lemon drizzle traybake may not even require a trip to the supermarket.

As rain is forecast for the whole of the bank holiday, stay warm inside with a lovely lemon drizzle bite and a warm mug of coffee or tea.

Now is the time to enjoy a long weekend, especially with a lovely bite to eat that takes very little effort to make.

Lemon drizzle traybake

Makes: 30 squares

Cooking time: 35 to 40 minutes

Ingredients:

225g butter, softened

225g caster sugar

275g self-raising flour

Two teaspoons baking powder

Four eggs

Four tablespoons of milk

Finely grated rind of two lemons

Crunchy topping:

175g of granulated sugar

Juice of two lemons

Equipment:

A traybake or roasting tin

Method

Grease the traybake tin (with butter) then cut a rectangle of non-stick baking parchment to fit the base and sides of a traybake tin.

Line the tin with the paper, pushing it neatly into the corners of the tin. Pre-heat the oven to 160°C/325°F/Gas three.

Measure all the ingredients for the traybake into a large bowl and beat well for about two minutes until well blended (an electric blender helps here).

Turn the mixture into the prepared tin and level the top gently with the back of the spatula.

Bake in the middle of the pre-heated oven for about 35 to 40 minutes, or until the traybake springs back when pressed lightly with a finger in the centre and is beginning to shrink away from the sides of the tin.

Allow the traybake to cool in the tin for a few minutes then lift the traybake out of the tin still in the lining paper. Carefully remove the paper and put the traybake onto a wire rack placed over a tray.

To make the crunchy topping

Mix the lemon juice and granulated sugar in a small bowl to give a runny consistency. Spoon this mixture evenly over the traybake while it is still just warm. Cut into about squares when cold.
